Boza is very interesting, refreshing drink, which has its roots back to the Ottoman Empire. Boza or bosa is a popular fermented beverage popularized in Turkey, Bulgaria, Romania and in the Balkan countries including Macedonia. It is a malt drink made from flour, it has a thick consistency and a low alcohol content (usually around 1%), and a slightly acidic sweet flavor. It is rich in vitamins A, B and E, iron, and appreciated as a drink that warms and fills with power. It is believed that boza can strengthen the immune system and possibly increase women's breast. Boza can raise the level of prolactin, a hormone that promote milk production and therefore may increase breasts. Boza is sometimes recommended to breastfeeding mothers.
Recipe for boza is simple.
Ingredients:
- 500 g corn flour
- 7 liters of lukewarm water
- 20 g yeast
- 500 g sugar
Preparation:
- Put corn flour in a larger pot or pan, pour 5 liters of water and leave overnight.
- In the morning, put on the stove and cook on a low heat stirring occasionally for two hours.
- Remove from heat and let sit for a few hours.
- Mix yeast with 2 l with lukewarm water. Stir in yeast mixture into flour mixture and let it ferment till the next day.
- Strain the liquid through cheesecloth the next day and add sugar. Fill in bottles, leave bottles half opened and put in the fridge overnight. Serve next day.
