Onion Casserole (Tavë Qepë)

There are lots of Albanian casseroles to make such as Lamb and Yogurt (Tavë Kosi), Beef and Leek (Tavë me Presh), Rabbit and Onion (Cumlek lepuri) and also plenty of vegetable casseroles too (Gjelle Me Zarzavata being a popular one).
This casserole is slow cooked, the beef falls apart and the vegetables are soft and tender. I love making this in the slow cooker, with the smell filling the house for the day.

Ingredients:
-                 1 Large Onion (Sliced)
-                 4 Carrots (Peeled & Sliced)
-                 2 Large Potatoes (Cubed)
-                 800g Beef (Diced)
-                 2 Litres Boiling Water
-                 100g Onion Gravy (Granules)
-                 Rosemary
-                 Salt and pepper

Directions:
Place the carrots, potatoes, onion and beef into a large casserole dish or into your slow cooker.
Sprinkle over the gravy granules and add the boiling water. Mix well.
Season with the salt, pepper and Rosemary and stir altogether.
Place into the oven on a low shelf, 180 degrees for 2 / 3 hours stirring occasionally. Or, turn the slow cooker up to high for 6 / 8 hours stirring occasionally.
This Albanian casserole is ready when the sauce has thickened similar to gravy and the potatoes crumble when touched.
