Turkey Calzone Pizza (Pica Gjel Deti)
Turkey is a large piece poultry and will often be
used over a few days. There are so many different recipes that can be made with
it but apart from a nice big roast, this Calzone Pizza is one of my favorites!
Quick and easy to make, it is also loved by the kids!

Ingredients:

2 Ready Rolled Pizza Dough

4 Handfuls Turkey (Left overs)

1 Aubergine (Skinned and diced)

1 Courgette (Skinned and diced)
-
3 Peppers (Mixed and Diced)

1 Onion (Diced)
-
5cm Albanian Salami (Diced)

4 Tbsp Pizza Sauce
-
4 Handfuls Cheddar Cheese
(Grated)

Basil
-
Pepper
-
Olive Oil
Directions:
Cook the Aubergine and courgette for a few minutes in
the olive oil. Add the onion, peppers, some basil and pepper and cook until
softened (about 15 minutes). Add the Albanian salami and turkey and cook for a
few minutes.
Take off the heat and add the pizza sauce – stir
well. While the mixture cools for a few minutes, add a pizza dough to a
foil covered large round pizza tray or baking tray. Add half the filling and
two handful of cheese on top, fold half the base over the filling to make a
semi circle.
Seal the calzone pizza by folding / twisting the
edges together. Add the other pizza dough and repeat. You will end up with
two calzone pizza’s side by side and can be cooked together in one go. Bake in
the oven on 180 degrees for 25 minutes or until golden brown.
