A Trio of Chicken Marinades
These three
mariandes are my favourite ones, they all compliment each other too so you can
serve more then one flavour together.
There are so many chicken marinades that I have
found, tried and tweaked to my liking. I have used ingredients that are easily
sourced, espically in Albania! I have based the recipes on 4 chicken
drumsticks, you can then double / half for the amount you have.
Honey Chicken

4 Chicken Drumsticks

2 Tbsp Honey

1 Tbsp Olive Oil
-
1 Tbsp Tomato Puree
-
1 Tbsp Mustard
-
1 Tbsp Soy Sauce (optional)
Lemon Chicken
-
4 Chicken Drumsticks
-
Juice of 1 Lemon
-
Glove of Galic grated or 1 Tsp
of Garlic powder
-
1 Tbsp Chopped / dried Parsley
-
1 Tbsp of Pepper
Rosemary Chicken
-
4 Chicken Drumsticks
-
2 Tbsp of Chopped / dried
Rosemary
-
2 Tbsp Olive Oil
-
Salt and Pepper to Season
Directions:
Make three slashes on all the drumsticks. Mix all the
ingredients together for each recipe. Put the chicken into a bowl, pour the
mixture over them and ensure each one is coated thoughly, repeat for each
recipe. Leave to stand for 30 miutes before placing into a baking dish and
cooking for 45 minutes at 180 degrees.
